poached lemongrass soy barramundi with salmon and chicken meatballs

you will need:

Lemongrass Soy Barramundi 120g
Salmon and Chicken Meatballs (5 pieces) 200g
Brown Rice 200g
Thai Hot & Sour Sauce 250ml

EXTRAS:
1 packet of dashi stock
2 wedges of lemon (optional)
Some red chillies (optional)
1 stalk of green onion
Handful of green vegetables

Microwave the brown rice for 3 minutes on medium to high heat.
Bring 500ml of water to a boil in a pot and add the dashi stock packet. Stir gently to mix.
Add green onion, red chillies and vegetables to the broth.
Add the Thai hot and sour sauce and further flavour with some fish sauce (optional).
Poach the barramundi and meatballs for a few minutes until cooked through.
Add a squeeze of lemon juice (to taste). 
Serve the broth and fish together with the brown rice. Use any remaining Thai hot and sour sauce for dipping.
